Mumsie's Gluten Free Oat Bread

 

 

Ciabatta means 'slipper' in Italian. One of my most favourite breads for its' light and airy texture. If you like a thin but chewy crust with large holes (great for sopping up all sorts of goodies)this is a bread for you. It is relatively flat with slight wrinkling on top due to a special shaping technique. An Italian tradition great with wine and olive oils. Makes a hearty sandwich, too.
Characterized by a super-crisp crust and large holes inside this ugly loaf. Ingredients include white organic flour, yeast, salt and water.

 

 

 

New York Deli Rye is a uniquely flavourful 1.5lb loaf.Made from the finest organic rye flours it is fermented for 24hrs before it's first rising. This makes for a loaf that is moist with a long shelf life. By the far, that most popular of Mumsie's breads and not to be confused with store-bought.

 

 

Triple L is a hybrid of Dr. Clive McCay's original recipe of the 1930's. This special loaf is for all the health conscious people who are looking for a healthy bread that keeps protein up and calories down. It features soy flour and powder, nonfat dry milk and wheat germ along with 12 grain and whole wheat flours. Soy Flour is a rich protein concentrate, with more that 40% protein. It provides the amino acids that are weak in wheat as well as calcium, iron and B vitamins. Nonfat dry milk has approximately twice the protein value of meat. It is a good source of calcium and riboflavin. Wheat germ adds more protein, iron, B vitamins and vitamin E to this dense flavour bread full of toasted sunflower and sesame seeds.
