You can use fresh oregano leaves in Italian, Mediterrannean or Mexican dishes featuring beef, chicken, fish and pork. It also lends wonderful flavour to casseroles, cheese, eggs, sauces, salads and or course soups. Fresh oregano should not be exposed to high heat for more than 10 minutes to retain its flavour.
And, did you know that Oregano is considered the ‘Pizza Herb". All oregano is part of the Mint family. Oregano grows wild in the mountains of Greece and its' name is derived from the Greek words ‘oros' and ganos. Meaning...."joy of the mountains. It can be bought fresh in regular supermarkets but care will need to be used to extend it's flavour life. Dried oregano is readily available. Try ‘hot and spicy' oregano for a treat on your next pizza.
